Minestrone Soup
Minestrone soup has no official recipe, and simply contains whatever vegetables are in season or available. It can have meat, or not, it can have rice, or pasta, it can be a vegetable based broth or a chicken stock. It’s whatever I (and you) want it to be.

Ingredients
- ¾ cup macaroni noodles raw, not dehydrated
- 2 tbsp tomatoes
- 1 tbsp carrots
- ½ tbsp celery
- 1 tbsp onions
- 1 tbsp green beans
- 1 tbsp cabbage
- 1 tbsp northern beans
- 1 tbsp red beans
- ¾ tsp dried chives
- ⅛ tsp garlic powder
- ½ tsp dried parsley
- ⅛ tsp dried basil
- ⅛ tsp dried oregano
- ½ tsp kosher salt
- ⅛ tsp ground peppers
- 1 tbsp olive oil
Instructions
- Add all dry ingredients into pot.
- Fill with plenty of water to cover all ingredients with 1-2 inches of water.
- Bring to a simmer.
- As the vegetables and pasta rehydrate it may absorb a lot of water. Add more water if necessary to keep a soupy consistency.
- Simmer for approximately 5 minutes, stirring occasionally.
- To save fuel, turn off stove, cover and let sit for another 10-15 minutes.
- Finish with olive oil for extra calories.
